  • 1 tbsp fresh turmeric root, peeled and minced
  • 1 tbsp fresh ginger root, peeled and minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 cup bell peppers (any color), diced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep all vegetables by peeling and chopping the turmeric and ginger roots. Dice the carrots, celery, bell peppers, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent (about 3 minutes). Stir in garlic, ginger, and turmeric.
  3. Add the diced carrots, celery, and bell peppers to the pot. Cook for about 5 minutes until softened.
  4. Pour in the vegetable broth and bring to a gentle boil while stirring occasionally for about 10 minutes.
  5. Reduce heat to low and let simmer for another 15 minutes to develop flavors.
  6. Taste and adjust seasoning with salt or pepper as desired. Serve hot.
