Description

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup old-fashioned oats
  • 8 oz cream cheese, softened
  • 1 cup tart cherries (canned or frozen), drained if necessary
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. In a bowl, mix together flour, sugar, oats, and softened butter until crumbly. Reserve 1 cup of this mixture for the topping.
  3. Press the remaining mixture firmly into the bottom of the prepared pan and bake for 10-12 minutes until golden brown.
  4. In another bowl, beat the cream cheese until smooth. Add sugar, eggs, and vanilla; mix until fully combined.
  5. Spread the cheesecake mixture over the baked crust and evenly distribute the tart cherries on top.
  6. Sprinkle the reserved crumb mixture over the cherry layer and return to the oven for an additional 25-30 minutes until set.
  7. Allow to cool completely before slicing into bars. Serve chilled or at room temperature.
