- ½ cup unsalted butter (melted)
- 1 cup pumpkin puree (canned)
- 12 oz cream cheese (softened)
- ¾ cup granulated sugar
- 3 large eggs
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of the prepared dish.
- Beat softened cream cheese in a large bowl until smooth. Add sugar and mix well. Incorporate eggs one at a time, mixing after each addition.
- Gently fold in pumpkin puree, cinnamon, nutmeg, and salt until combined.
- Pour half of the cheesecake mixture over the crust. Add dollops of the remaining mixture on top and swirl with a knife or toothpick.
- Bake for 30-35 minutes until edges are set and center is slightly jiggly. Allow to cool completely before slicing.
