  • 1 can (400ml) full-fat coconut milk
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro (optional)

Instructions

  1. Prepare the ingredients: Peel and dice sweet potatoes, chop the onion, mince the garlic, and grate the ginger.
  2. In a large pot over medium heat, add vegetable oil. Sauté the onion until translucent (about 5 minutes). Add garlic and ginger; stir for an additional minute until fragrant.
  3. Stir in diced sweet potatoes, curry powder, and turmeric; coat evenly and cook for about 2 minutes.
  4. Pour in coconut milk and one cup of water (or vegetable broth). Bring to a gentle simmer, cover the pot, and cook for 20-25 minutes until sweet potatoes are tender.
  5. Taste and adjust seasoning as needed. If desired, add more liquid for a thinner consistency.
  6. Serve hot over rice or with naan bread. Garnish with fresh cilantro if using.
