Instructions

  1. Preheat your oven to 350°F (175°C). Peel and chop sweet potatoes into chunks. Boil in salted water until fork-tender (about 15 minutes), drain, and mash until smooth.
  2. In a large mixing bowl, cream softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time to the creamed mixture, mixing well after each addition.
  4. Fold in mashed sweet potatoes, milk, and cinnamon until combined.
  5. In another bowl, whisk together flour and baking powder. Gradually add to the wet ingredients until just combined.
