- 1 bunch fresh radishes (about 10–12 radishes)
- 1 cup water
- 1 cup apple cider vinegar
- 2 tablespoons sugar
- 1 tablespoon kosher salt
- 1 teaspoon red pepper flakes (adjust to taste)
Instructions
- Wash the radishes thoroughly, trim tops and roots, then slice them into thin rounds.
- In a medium saucepan over medium heat, combine water, apple cider vinegar, sugar, salt, and red pepper flakes. Stir until dissolved and bring to a gentle simmer.
- Pack sliced radishes into clean glass jars and carefully pour the brine over them. Leave some space at the top.
- Allow jars to cool at room temperature for about an hour before sealing with lids.
- Refrigerate for at least 24 hours before enjoying.
