Instructions
- Prepare the strawberries by washing and slicing them. Toss with 2 tbsp sugar and lemon juice; set aside.
- Make the strawberry sauce by combining half of the macerated strawberries with an additional 2 tbsp sugar in a saucepan over medium heat. Cook until bubbly and thickened (5-7 minutes), then cool.
- In a cake pan lined with plastic wrap, layer shortcake biscuits, followed by vanilla ice cream. Top with half of the sliced strawberries and drizzle with strawberry sauce.
- Repeat the layering process, ending with remaining strawberries and sauce on top. Freeze for at least 4 hours.
- Whip the heavy cream until soft peaks form. Remove the cake from the freezer, garnish with whipped cream, and serve.
