Description

  • 2 cups fresh strawberries, sliced
  • 8 oz cream cheese, softened
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with nonstick spray.
  2. Toss sliced strawberries with 1/4 cup of sugar and set aside to macerate.
  3. In a bowl, beat softened cream cheese until smooth. Add one egg and 1/2 cup sugar; mix until well combined.
  4. In another bowl, combine the yellow cake mix with melted butter and the remaining egg until no dry spots remain.
  5. Layer half of the cake batter in the prepared dish, followed by the strawberries and dollops of cream cheese mixture. Top with the remaining cake batter.
  6. Bake for 40-45 minutes or until golden brown on top and set in the center. Allow to cool slightly before serving.
