  • 4 cloves fresh garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp dark brown sugar
  • 1 tbsp sesame oil
  • Salt, to taste
  • 2 green onions, chopped (for garnish)
  • Vegetable oil, for cooking

Instructions

  1. Prepare the eggplant: Slice into bite-sized pieces and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
  2. Rinse the eggplant under cold water, then pat dry.
  3. Heat vegetable oil in a skillet over medium heat. Cook the eggplant in batches until golden brown, about 4-5 minutes per batch.
  4. In the same skillet, lower the heat and sauté minced garlic until fragrant (about 1 minute). Stir in soy sauce and brown sugar until dissolved.
  5. Add the cooked eggplant back to the skillet along with sesame oil. Toss until coated in sauce, about 2 minutes.
  6. Transfer to a serving platter, garnish with green onions, and serve warm over rice or noodles.
