  • 10 ounces fresh spinach
  • 4 ounces crumbled feta cheese
  • 1 package (2 sheets) puff pastry
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F (200°C). In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
  2. Stir in fresh spinach and cook until wilted. Remove from heat and let cool slightly.
  3. In a bowl, mix the cooled spinach with feta cheese and a beaten egg until well combined.
  4. Roll out puff pastry on a floured surface; cut into squares or circles (about 4 inches wide).
  5. Spoon approximately one tablespoon of filling onto each piece of pastry. Fold and seal edges with a fork.
  6. Place pastries on a parchment-lined baking sheet; brush tops with egg wash. Bake for 20-25 minutes or until golden brown.
