- 1 lb lean ground beef
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 1 cup Italian-seasoned breadcrumbs
- 2 large eggs
- 1 cup shredded part-skim mozzarella cheese
- ½ cup freshly grated parmesan cheese
- Salt and pepper to taste
- 2 cups marinara sauce (for serving)
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, sauté the chopped spinach and minced garlic until the spinach wilts (about 2 minutes). Remove from heat.
- In a large mixing bowl, combine the ground beef, sautéed spinach and garlic, breadcrumbs, eggs, mozzarella cheese, parmesan cheese, salt, and pepper. Mix until just combined.
- Form the mixture into meatballs about 1 inch in diameter and place them in the prepared baking dish.
- Bake for 20-25 minutes until golden brown and cooked through.
- Serve hot with marinara sauce drizzled on top.
