- 9 lasagna noodles (no-boil)
- 2 cups sliced zucchini
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a skillet, heat olive oil over medium heat. Sauté zucchini, mushrooms, and spinach for about 5 minutes until slightly softened. Season with Italian seasoning.
- In a mixing bowl, combine ricotta cheese with half of the shredded mozzarella and grated Parmesan. Season with salt and pepper.
- Spread a thin layer of marinara sauce in the baking dish. Layer noodles, sautéed veggies, ricotta mixture, and repeat until ingredients are used up. Top with remaining noodles and marinara sauce followed by the rest of the mozzarella.
- Cover tightly with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbling.
- Let it rest for at least 10 minutes before slicing.
