  • 1 lb sirloin steak, diced
  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers (red or green), diced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 1 can (15 oz) kidney beans, rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the diced steak with salt and pepper and add to the pot. Brown the steak on all sides (about 5 minutes) and transfer to a plate.
  2. In the same pot, sauté chopped onion, bell peppers, and minced garlic until softened (about 3 minutes).
  3. Return the browned steak to the pot along with crushed tomatoes, black beans, kidney beans, chili powder, cumin, and any additional spices. Stir well.
  4. Pour in enough beef broth or water to cover the mixture. Bring to a boil then reduce heat to low. Cover and simmer for at least one hour to develop flavors.
  5. Taste and adjust seasonings as needed. For thicker chili, uncover during the last few minutes of cooking.
  6. Serve hot in bowls with toppings like sour cream or shredded cheese.
