  • 1 cup canned pumpkin puree
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cardamom
  • 1/4 cup unsalted butter (melted)
  • 3 large eggs
  • 8 oz mascarpone cheese
  • 1/2 cup unsalted butter (for browning)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a jelly roll pan and line it with parchment paper.
  2. In a bowl, whisk together pumpkin puree, eggs, sugar, and melted butter until smooth.
  3. In another bowl, mix flour, baking powder, cardamom, and salt.
  4. Gradually combine dry ingredients into the pumpkin mixture until just blended.
  5. Spread batter evenly in the prepared pan and bake for 15-20 minutes until a toothpick comes out clean.
  6. While baking, brown the additional butter in a saucepan until golden; cool slightly. Mix with mascarpone until smooth.
  7. Once baked, let the cake cool slightly before flipping onto a powdered sugar-dusted towel. Spread filling over cake and roll tightly using the towel for support.
  8. Slice and serve as desired.
