  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 3 large eggs
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar until combined. Press evenly into the prepared pan. Bake for 10 minutes until lightly golden.
  3. Beat softened cream cheese in another bowl until smooth. Gradually add remaining sugar and vanilla; mix well. Add eggs one at a time, mixing thoroughly after each addition.
  4. Stir in ground cinnamon until fully incorporated.
  5. Pour cheesecake filling over the baked crust and bake for an additional 30-35 minutes until edges are set but center jiggles slightly.
  6. Allow to cool completely before chilling in the fridge for at least two hours. Cut into squares and enjoy!
