  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fresh salsa
  • 1 cup low-sodium chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; sear in a pan over medium heat until golden brown (4-5 minutes per side). Let cool slightly, then shred.
  3. In a bowl, mix shredded chicken, black beans, half the cheese, salsa, cumin, and paprika.
  4. Lay tortillas flat; spoon the chicken mixture down the center of each tortilla. Fold in sides and roll tightly.
  5. Place burritos seam-side down in the baking dish. Mix chicken broth with any remaining salsa; pour over burritos.
  6. Top with remaining cheese, cover with foil, and bake for 25 minutes or until heated through.
