Ingredients

  • 1 cup farro
  • 2 cups mixed mushrooms (cremini and shiitake)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • ½ cup fresh sage leaves
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil

Instructions

  1. In a large pan over medium heat, warm the olive oil and sauté the onion until translucent. Add garlic and cook for another minute.
  2. Stir in the farro and toast for about two minutes until fragrant.
  3. Gradually add vegetable broth, one cup at a time, stirring continuously until absorbed.
  4. Meanwhile, in another pan, sauté mixed mushrooms in olive oil until golden brown; add them to the risotto along with fresh sage during the last few minutes of cooking.
  5. Once the farro is tender and creamy (about 30-35 minutes), stir in Parmesan cheese until melted.
  6. Serve hot, garnished with extra sage if desired.
