- 3 lbs beef chuck roast
- 1 cup bourbon
- 1 medium sweet onion, finely chopped
- 4 cloves garlic, minced
- 1/2 cup brown sugar
- 2 tsp smoked paprika
- 1 cup ketchup
- 1/4 cup cider vinegar
- 2 tbsp Worcestershire sauce
Instructions
- Prepare your ingredients by chopping the onion and garlic.
- In a skillet over medium-high heat, sear the beef chuck roast until browned on all sides.
- In a bowl, mix ketchup, bourbon, brown sugar, cider vinegar, Worcestershire sauce, smoked paprika, garlic, and onion until well combined.
- Transfer the seared beef to a slow cooker or Dutch oven and pour the sauce mixture over it.
- Cook on low for about 8 hours in a slow cooker or at 300°F (150°C) in the oven for around 3 hours.
- Once tender, shred the beef with two forks and mix it back into the sauce before serving.
