  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 2 cans (4 oz each) diced green chiles
  • 1 medium yellow onion, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 avocado (sliced)
  • Juice of 2 limes
  • Fresh cilantro

Instructions

  1. Chop the onion and mince garlic if desired.
  2. In the slow cooker, layer the chicken breasts at the bottom followed by onions, white beans, green chiles, and pour in the chicken broth until covered.
  3. Sprinkle cumin, oregano, salt, and pepper; gently stir to combine.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Once cooked, shred the chicken in the pot using two forks; stir everything together.
  6. Serve in bowls topped with avocado slices, lime juice, and cilantro.
