  • 1 lb fresh Brussels sprouts, trimmed and halved
  • 1/2 cup 100% pomegranate juice
  • 2 tbsp balsamic vinegar
  • 2 tbsp raw honey
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste
  • 1/2 cup fresh pomegranate seeds (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim and halve the Brussels sprouts for even cooking.
  3. In a bowl, whisk together pomegranate juice, balsamic vinegar, honey, olive oil, salt, and pepper until well combined.
  4. Place the halved Brussels sprouts on a parchment-lined baking sheet. Drizzle with the glaze and toss to coat evenly.
  5. Spread the sprouts in a single layer on the baking sheet and roast for 20-25 minutes until crispy outside and tender inside.
  6. Remove from the oven and sprinkle fresh pomegranate seeds over the top right before serving.
