  • 1 lb Brussels sprouts, halved
  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • 1/4 cup pure maple syrup
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or spray with nonstick cooking spray.
  3. In a bowl, toss the halved Brussels sprouts with olive oil, garlic powder, salt, pepper, maple syrup, and balsamic vinegar until well-coated.
  4. Arrange the seasoned pork chops on one side of the baking sheet and spread the Brussels sprouts on the other side.
  5. Roast for 25-30 minutes or until the pork reaches an internal temperature of at least 145°F (63°C) and the sprouts are golden brown.
  6. Allow to rest for a few minutes before serving, drizzling any leftover glaze over both.
