Description

Savory Lemon Vegetable Lasagna is a delightful blend of fresh zucchini, vibrant spinach, and creamy ricotta, all enveloped in tender lasagna noodles and zesty lemon flavors.   • 9 lasagna noodles (regular or no-boil)
  • 2 cups diced zucchini
  • 2 cups fresh spinach
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Zest and juice of 1 lemon
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 24 oz marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add zucchini and spinach. Cook until tender (about 5 minutes), seasoning with salt and pepper.
  2. In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, and half the mozzarella. Mix until smooth.
  3. In a baking dish, spread a thin layer of marinara sauce. Layer three lasagna noodles on top, followed by half the sautéed vegetables and half the ricotta mixture. Add another layer of marinara sauce.
  4. Repeat layering with remaining ingredients: noodles, vegetables, ricotta mixture, and marinara sauce. Finish with one last layer of noodles topped with marinara and remaining mozzarella.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
  6. Let cool for 10 minutes before slicing to serve warm.
