  • 1/2 cup cooked sausage (Italian or breakfast)
  • 1/2 cup fresh tomatoes (chopped)
  • 1/3 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1 tbsp butter or oil

Instructions

  1. In a skillet over medium heat, cook the sausage until browned (about 5-7 minutes). Remove and set aside.
  2. Chop fresh tomatoes into small pieces.
  3. In a bowl, whisk together the eggs with salt and pepper.
  4. Heat the skillet again and add butter/oil. Once melted, pour in the egg mixture.
  5. When edges start to set, sprinkle half of the sausage, tomatoes, and cheese on one side of the omelet.
  6. Fold the omelet over and cook until fully set (about 1-2 minutes).
  7. Serve hot garnished with extra cheese if desired.
