  • 1 pound breakfast sausage (pork or turkey)
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 small onion (diced)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with non-stick spray.
  2. In a skillet over medium heat, cook the sausage until browned and crumbly; break apart as it cooks.
  3. Add diced onion to the skillet and sauté until translucent (about 5 minutes).
  4. In a large bowl, combine the cooked sausage/onion mixture with hashbrowns and beaten eggs. Stir in half of the cheddar cheese.
  5. Transfer the mixture to the prepared baking dish, spreading evenly. Top with remaining cheese.
  6. Bake for 25-30 minutes until golden brown. Allow to cool slightly before serving.
