Ingredients

  • 8 oz Cream Cheese, softened
  • 1/4 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 cup Whipped Topping
  • 68 Graham Crackers, crushed
  • 6 Strawberries, tops intact

Instructions

  1. Prepare the Graham Cracker Crust: Crush graham crackers into fine crumbs and mix with 2 tbsp melted butter until sandy.
  2. Assemble the Base: Press about 1 tbsp of the mixture into mini cupcake liners in a muffin tin and refrigerate.
  3. Make the Cheesecake Filling: Beat cream cheese and sugar until smooth, then add vanilla and fold in whipped topping.
  4. Fill Each Cupcake Liner: Spoon cheesecake filling over each crust and smooth the tops.
  5. Top with Strawberries: Slice off the bottom of each strawberry for stability and place on top of each cheesecake bite.
  6. Chill & Serve: Refrigerate for at least 2 hours before serving.
