Description

  • 6 large portobello mushrooms
  • 8 oz fresh salmon fillet
  • 4 oz cream cheese
  • 2 cloves garlic, minced
  • 2 tbsp chives or green onions, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Clean the portobello mushrooms and remove the stems carefully.
  3. In a skillet over medium heat, cook the salmon for 6-8 minutes until opaque; flake with a fork.
  4. In a bowl, mix together cream cheese, minced garlic, chives, flaked salmon, lemon juice, salt, and pepper until well combined.
  5. Generously stuff each mushroom cap with the mixture.
  6. Bake for 20-25 minutes until golden brown on top.
