  • 4 (6 oz) cod fillets
  • 1 lb Yukon Gold potatoes, cut into bite-sized pieces
  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tsp fresh parsley, chopped
  • 2 tsp fresh thyme, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, toss the potato pieces with 2 tbsp olive oil, salt, pepper, minced garlic, and half of the herbs until evenly coated.
  3. Spread the potatoes in the baking dish and roast for about 25 minutes or until golden brown.
  4. Season the cod fillets with salt, pepper, lemon juice, and remaining herbs.
  5. After roasting the potatoes for 25 minutes, nestle the seasoned cod among them.
  6. Return to the oven and roast for an additional 15-20 minutes until the cod flakes easily with a fork.
