- 1 lb Yukon Gold potatoes, cut into bite-sized pieces
- 3 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 2 tsp fresh parsley, chopped

- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In a bowl, toss the potato pieces with 2 tbsp olive oil, salt, pepper, minced garlic, and half of the herbs until evenly coated.
- Spread the potatoes in the baking dish and roast for about 25 minutes or until golden brown.
- Season the cod fillets with salt, pepper, lemon juice, and remaining herbs.
- After roasting the potatoes for 25 minutes, nestle the seasoned cod among them.
- Return to the oven and roast for an additional 15-20 minutes until the cod flakes easily with a fork.
