- 1/4 cup tahini
- 2 cloves garlic
- 2 tbsp lemon juice
- 3 tbsp olive oil

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash, peel, and chop the carrots into chunks. Toss with olive oil, salt, and pepper, then spread on the baking sheet. Roast for 25-30 minutes until tender and caramelized.
- Allow the roasted carrots to cool slightly. In a food processor, combine the carrots, chickpeas, tahini, garlic, lemon juice, and remaining olive oil. Blend until smooth.
- Taste and adjust seasonings with more salt or lemon juice if desired.
- Transfer hummus to a bowl. Drizzle with olive oil and garnish with paprika or parsley before serving.
