Description

Roasted Carrot Hummus is a deliciously creamy dip that highlights the natural sweetness of roasted carrots combined with the earthiness of chickpeas and tahini.   • 2 cups roasted carrots (about 4 medium-sized)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash, peel, and chop the carrots into chunks. Toss with olive oil, salt, and pepper, then spread on the baking sheet. Roast for 25-30 minutes until tender and caramelized.
  3. Allow the roasted carrots to cool slightly. In a food processor, combine the carrots, chickpeas, tahini, garlic, lemon juice, and remaining olive oil. Blend until smooth.
  4. Taste and adjust seasonings with more salt or lemon juice if desired.
  5. Transfer hummus to a bowl. Drizzle with olive oil and garnish with paprika or parsley before serving.
