Ingredients

Scale
  • 1 lb fresh carrots
  • 2 tbsp extra virgin olive oil
  • 2 tbsp tahini
  • 2 tbsp freshly squeezed lemon juice
  • 2 cloves garlic (minced)
  • 1/2 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Wash and peel the carrots, then cut them into uniform sticks or rounds.
  3. 3. Arrange the carrot pieces on a parchment-lined baking sheet. Drizzle with olive oil and season with salt, pepper, and cumin. Toss to coat evenly.
  4. 4. Roast for about 25-30 minutes until tender and caramelized.
