- 1 medium green cabbage
- 3 tbsp extra-virgin olive oil (divided)
- 1 tsp kosher salt (divided)
- 1/2 tsp freshly cracked black pepper (divided)
- 2 cups stale sourdough bread, cubed
- 1/4 cup freshly grated Parmesan cheese (plus more for topping)
- 1/2 cup Caesar dressing (store-bought or homemade)
Instructions
- Preheat your oven to 425°F (220°C).
- Cut the cabbage into thick wedges and arrange them on a parchment-lined baking sheet. Drizzle with 2 tablespoons of olive oil, and season with half the salt and pepper.
- Roast the cabbage for 25-30 minutes until crispy and golden.
- In a bowl, toss sourdough cubes with remaining olive oil, salt, pepper, and Parmesan cheese. Spread on another baking sheet and roast for 10-15 minutes until golden brown.
- Once roasted, place cabbage on a serving platter. Drizzle generously with Caesar dressing and top with croutons and extra Parmesan.
