  • 1/2 tsp baking soda
  • 1/2 cup unsalted butter (room temperature)
  • 1/4 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 12 Reese’s Peanut Butter Cups (regular size)
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla extract; mix until well combined.
  3. In another bowl, whisk together the flour and baking soda. Gradually add this mixture to the wet ingredients; mix until just combined.
  4. Gently fold in the chocolate chips.
  5. Scoop tablespoon-sized amounts of dough into each muffin cavity, pressing down lightly in the center to create space for the peanut butter cups.
  6. Bake for 10-12 minutes or until golden brown around the edges. Allow cooling slightly before removing from the tin.
