  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • ¾ cup whole milk (or almond/soy milk)
  • 1 tsp pure vanilla extract
  • 1 cup fresh raspberries (or frozen, thawed)
  • 8 oz cream cheese, softened (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and sugar until well combined.
  3. In another bowl, cream the butter and sugar until fluffy. Add eggs one at a time, mixing in vanilla afterward.
  4. Gradually add the dry mixture and milk alternately until just combined.
  5. Mash half the raspberries in a bowl and gently fold into the batter.
  6. Fill the liners two-thirds full with batter and add more raspberry mash on top for swirling.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Cool before frosting.
