Description

  • 1 cup canned pumpkin puree
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 1 cup mini marshmallows (for topping)
  • ½ cup semi-sweet chocolate chips
  • ¼ cup graham cracker crumbs

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, brown sugar, granulated sugar, egg, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Stir in chocolate chips and graham cracker crumbs.
  5. Drop rounded tablespoons of dough onto the baking sheet, spacing them about two inches apart.
  6. Bake for 12-15 minutes until golden brown. Add mini marshmallows on top during the last minute of baking.
  7. Cool for five minutes on the sheet before transferring to wire racks.
