  • 1 cup pumpkin puree (canned or homemade)
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp salt
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix together pumpkin puree, eggs, vegetable oil, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. For the cream cheese swirl, beat softened cream cheese with powdered sugar and vanilla until smooth.
  6. Fill each muffin liner two-thirds full with batter. Add a dollop of cream cheese mixture on top and cover with remaining batter. Use a toothpick to gently swirl.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean. Let cool slightly before serving.
