- 4 medium Yukon Gold potatoes (about 2 lbs), thinly sliced
- 1 cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- 1 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
- In a bowl, mix heavy cream with minced garlic, salt, pepper, and thyme.
- Layer half of the sliced potatoes in the baking dish and pour half of the cream mixture over them. Repeat with remaining potatoes and cream. Top with cheddar cheese.
- Season pork chops with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chops for about 3 minutes on each side until golden brown.
- Place seared chops on top of the layered potatoes in the baking dish. Cover with foil and bake for 30 minutes.
