  • 4 bone-in pork chops (1-inch thick)
  • 4 medium Yukon Gold potatoes (about 2 lbs), thinly sliced
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  2. In a bowl, mix heavy cream with minced garlic, salt, pepper, and thyme.
  3. Layer half of the sliced potatoes in the baking dish and pour half of the cream mixture over them. Repeat with remaining potatoes and cream. Top with cheddar cheese.
  4. Season pork chops with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chops for about 3 minutes on each side until golden brown.
  5. Place seared chops on top of the layered potatoes in the baking dish. Cover with foil and bake for 30 minutes.
  6. Remove foil and bake for an additional 10 minutes until bubbly and golden brown. Let rest before serving.
