  • 4 bone-in chicken thighs (skin-on)
  • 1 cup pure pomegranate juice
  • 2 tbsp honey
  • 3 cloves garlic (minced)
  • 2 tbsp low-sodium soy sauce
  • 1/4 cup fresh pomegranate seeds (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season the chicken thighs generously with salt and pepper.
  3. In a bowl, whisk together pomegranate juice, honey, minced garlic, and soy sauce.
  4. Place the chicken in the baking dish and pour half of the glaze over them, coating well.
