  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 tsp almond extract
  • 2 cups fresh plums, pitted and chopped
  • ¼ cup sliced almonds for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream the butter and sugar until fluffy.
  3. Add eggs one at a time to the creamed mixture, mixing well after each addition. Stir in almond extract.

  5. Pour batter into the prepared pan and sprinkle sliced almonds on top. Bake for 45–50 minutes or until a toothpick comes out clean.
