  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar (for crust)
  • ½ cup granulated sugar (for filling)
  • 16 oz cream cheese, softened
  • ¾ cup sour cream
  • ¾ cup full-fat coconut cream
  • 1 cup pineapple chunks, well-drained
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a greased baking dish.
  2. In a large bowl, beat softened cream cheese until smooth. Add sugar, sour cream, and coconut cream; mix until combined.
  3. Gently fold in pineapple chunks.
  4. Add eggs one at a time while mixing gently until just combined.
  5. Pour filling over crust and bake for 30-35 minutes or until set but slightly wobbly in the center.
  6. Cool to room temperature and refrigerate for at least two hours before serving.
