  • 4 medium bell peppers (red, yellow, or green)
  • 1 cup cooked rice
  • ½ cup creamy or crunchy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 1 cup chopped vegetables (carrots, onions, etc.)
  • 1 tsp sesame oil
  • 2 green onions (sliced) for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a bowl, mix together cooked rice, peanut butter, chopped vegetables, soy sauce, and sesame oil until well combined.
  4. Generously fill each pepper with the mixture and place upright in the baking dish.
  5. Cover with aluminum foil and bake for 25 minutes. Then remove foil and bake for an additional 10 minutes until golden brown.
  6. Top with sliced green onions before serving.
