  • 1 cup creamy peanut butter
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 cup chopped carrots
  • 2 cups cooked chicken or tofu
  • 2 tbsp low-sodium soy sauce
  • 1 tsp curry powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cook the elbow macaroni in salted boiling water until al dente; drain and set aside.
  3. Sauté chopped bell peppers, onions, and carrots in a skillet over medium heat until tender but still crunchy (about 5 minutes).
  4. In a bowl, whisk together peanut butter, coconut milk, soy sauce, curry powder, salt, and pepper until smooth.
  5. In the baking dish, combine cooked pasta with sautéed vegetables and shredded chicken or tofu. Pour the peanut sauce over everything and stir well to coat evenly.
  6. Cover with foil and bake for about 25 minutes; remove foil and bake for an additional 10-15 minutes until golden brown.
