  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz canned tomato sauce
  • 14.5 oz canned diced tomatoes
  • 8 oz lasagna noodles, broken into pieces
  • 4 cups chicken or vegetable broth
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Sauté chopped onion and minced garlic until fragrant (about 5 minutes).
  2. Add ground beef, breaking it apart as it cooks. Season with salt and pepper; cook until browned (about 7 minutes).
  3. Pour in the tomato sauce and diced tomatoes; let simmer for 5 minutes.
  4. Add broken lasagna noodles and enough broth to cover everything by an inch. Bring to a boil.
  5. Reduce heat to low, cover the pot, and simmer until pasta is tender (about 10 minutes).
  6. Serve hot, topping each bowl with dollops of ricotta cheese and shredded mozzarella.
