- 2 lbs beef chuck roast, cut into bite-sized pieces
- 1 can (13.5 oz) full-fat coconut milk
- 2 inches fresh ginger, grated
- 2 lemongrass stalks, smashed
- 3 tbsp chili paste (adjust to taste)
- 4 shallots, finely chopped
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 cinnamon stick
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the beef and grating the ginger.
- In a large pot, heat oil over medium heat; sauté chopped shallots and grated ginger until fragrant (about 2 minutes).
- Add beef pieces to the pot; brown on all sides (about 5 minutes).
- Stir in coconut milk, smashed lemongrass, chili paste, turmeric, coriander, and cinnamon stick.
- Bring to a simmer; reduce heat to low and cover. Cook for about 2 hours until the beef is tender.
