  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 inches fresh ginger, grated
  • 2 lemongrass stalks, smashed
  • 3 tbsp chili paste (adjust to taste)
  • 4 shallots, finely chopped
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 cinnamon stick
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the beef and grating the ginger.
  2. In a large pot, heat oil over medium heat; sauté chopped shallots and grated ginger until fragrant (about 2 minutes).
  3. Add beef pieces to the pot; brown on all sides (about 5 minutes).
  4. Stir in coconut milk, smashed lemongrass, chili paste, turmeric, coriander, and cinnamon stick.
  5. Bring to a simmer; reduce heat to low and cover. Cook for about 2 hours until the beef is tender.
  6. Serve hot over steamed jasmine rice or enjoy on its own.
