- 1 cup low-sodium vegetable broth

- 1 sheet puff pastry (about 14 oz)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet over medium heat, heat olive oil. Sauté onions and garlic until soft, about 5 minutes.
- Add chopped mushrooms; cook until tender and moisture has evaporated, approximately 8 minutes.
- Stir in vegetable broth and thyme; simmer for about 10 minutes until slightly thickened. Season with salt and pepper.
- Roll out puff pastry on a floured surface. Spoon mushroom mixture into a baking dish and cover with pastry, sealing edges well and cutting slits for steam.
