Description

Ingredients

  • 2 cups mixed mushrooms (cremini and shiitake), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 1 tsp dried thyme
  • 1 sheet puff pastry (about 14 oz)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, heat olive oil. Sauté onions and garlic until soft, about 5 minutes.
  3. Add chopped mushrooms; cook until tender and moisture has evaporated, approximately 8 minutes.
  4. Stir in vegetable broth and thyme; simmer for about 10 minutes until slightly thickened. Season with salt and pepper.
  5. Roll out puff pastry on a floured surface. Spoon mushroom mixture into a baking dish and cover with pastry, sealing edges well and cutting slits for steam.
  6. Bake for 25-30 minutes until golden brown.
