  • 1 egg (for egg wash)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a floured surface to about 12 inches in diameter. Transfer it to the prepared baking sheet.
  3. In a skillet over medium heat, heat olive oil and sauté the shallots until soft (about 3 minutes). Add mushrooms, thyme, salt, and pepper; cook until browned (5-7 minutes).
  4. Spread the mushroom mixture onto the center of the pastry, leaving a 2-inch border. Sprinkle cheese on top.
  5. Fold the pastry edges over the filling, brushing exposed edges with beaten egg for a golden finish.
  6. Bake for 25-30 minutes until the crust is golden brown and puffed. Serve warm.
