- 2 tbsp brown sugar
- 1 tsp salt
- ⅓ cup baking soda (for bath)
- 2 cups shredded mozzarella cheese
Instructions
- In a mixing bowl, combine warm water, brown sugar, and yeast. Let sit for 5 minutes until frothy. Gradually mix in salt and flour until a shaggy dough forms.
- Knead on a floured surface for 6-8 minutes until smooth. Place in an oiled bowl, cover with a damp cloth, and let rise for about 1 hour.
- Punch down risen dough and divide into eight pieces. Roll each into a long rope and twist into pretzel shapes.
- Boil water in a large pot and stir in baking soda. Boil each pretzel for 30 seconds before placing on parchment-lined baking sheets.
- Cut slits on top of each pretzel and stuff with mozzarella cheese. Brush with egg wash and sprinkle sea salt before baking at 425°F for 12-15 minutes until golden brown.
