  • 2 lbs boneless, skinless chicken thighs
  • 1 medium onion, finely chopped
  • 4 garlic cloves, crushed
  • 2 medium carrots, sliced
  • 1 bell pepper, diced (any color)
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1 cinnamon stick
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Chop the onions, bell peppers, slice the carrots, and crush the garlic.
  2. In a large pot over medium heat, add 2 tbsp olive oil and brown the chicken thighs for about five minutes on each side. Remove and set aside.
  3. In the same pot, sauté the onions, garlic, carrots, and bell peppers until softened (about 5 minutes).
  4. Stir in the diced tomatoes and spices (cumin, coriander, cinnamon stick), mixing well for two minutes.
  5. Return the browned chicken to the pot and add enough water or chicken broth to cover everything. Bring to a simmer.
  6. Cover the pot and let it simmer on low heat for about 30 minutes until flavors meld together.
  7. Serve hot with cilantro garnish alongside couscous or crusty bread.
