  • 1/4 cup granulated sugar
  • 1/3 cup melted butter
  • 16 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 2 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C) and line a mini muffin tin with paper liners.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press about one tablespoon into each muffin cup.
  3. In another bowl, beat softened cream cheese until smooth. Mix in sour cream, vanilla, and sugar until creamy. Add eggs one at a time, mixing gently.
  4. Pour the filling over each crust until three-quarters full.
  5. Bake for 20 minutes or until edges are set and centers jiggle slightly. Cool for an hour at room temperature before chilling in the fridge for at least two hours.
