Ingredients

  • 1 cup fresh spinach
  • 1 cup cherry tomatoes, halved

  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash spinach and halve cherry tomatoes. Chop red onion finely.
  2. Heat olive oil in a large nonstick skillet over medium heat. Sauté red onion until translucent (about 3 minutes).
  3. Add spinach and cherry tomatoes; stir until spinach wilts and tomatoes soften (about 2 minutes).
  4. In a bowl, whisk eggs with salt and pepper.
  5. Pour eggs over sautéed veggies, gently stirring until cooked through but still fluffy (about 4 minutes).
