  • 1 large head cauliflower, cut into florets (about 6 cups)
  • 1 cup sharp cheddar cheese, shredded
  • 8 oz cream cheese, softened
  • 1 cup bacon bits (cooked)
  • 1 cup panko bread crumbs
  • 4 tbsp unsalted butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In boiling salted water, cook the cauliflower florets until tender (5-7 minutes). Drain and set aside.
  3. In a bowl, mix softened cream cheese with half of the cheddar cheese, bacon bits, salt, and pepper until well combined.
  4. Fold in the cooked cauliflower until fully coated and transfer to the baking dish.
  5. Sprinkle remaining cheddar cheese on top. Mix panko breadcrumbs with melted butter and evenly distribute over the casserole.
  6. Bake for 25-30 minutes until bubbly and golden brown. Allow to cool slightly before serving.
