  • 1 lb lean ground beef
  • 1/2 cup panko breadcrumbs
  • 2 green onions, finely chopped
  • 1/3 cup Korean BBQ sauce (store-bought or homemade)
  • 1 fresh baguette
  • 1 medium carrot, julienned
  • 1 English cucumber, thinly sliced
  • 1/2 cup mayonnaise
  • Juice of 1 lime

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, mix ground beef, panko breadcrumbs, green onions, and half of the Korean BBQ sauce until well combined.
  2. Form into small meatballs (about 1 inch in diameter) and place on a lined baking sheet.
  3. Bake for 20 minutes or until cooked through.
  4. While baking, pickle carrots and cucumbers in equal parts vinegar and sugar for about 10 minutes.
  5. Mix mayonnaise with lime juice in a separate bowl.
  6. Slice baguette open and spread zesty mayo inside. Layer meatballs and top with pickled veggies before closing the sandwich.
